チキン竜田 香味トマトソースがけ/Japanese fried Chicken with Savory Tomato Sauce

材料 Ingredients

  • 透明醤油・・・・・・・・・・大さじ2

  • 鶏むね肉・・・・・・・・・・300g

  • ゆで卵・・・・・・・・・・・1個分

  • ごま油・・・・・・・・・・・大さじ2

  • ベビーリーフ・・・・・・・・適量

  • 片栗粉・・・・・・・・・・・適量


  • みりん・・・・・・・・・大さじ2

  • 酒・・・・・・・・・・・大さじ2


  • 長ねぎ・・・・・・・・・1/4本分

  • ミニトマト・・・・・・・6個

  • しょうが(すりおろし)・小さじ1/2

  • 片栗粉・・・・・・・・・少々

  • 粗びき黒こしょう・・・・少々

  • Ken meat-300g

  • Boiled eggs-1Pieces

  • Sesame oil- 2tbsps

  • Baby leaf-appropriate amount 

  • Potato starch-amount of starch

  • Clear soy sauce-2tbsps


  • Mirin- 2 tbsps

  • Sake-2tbsps


  • Long green onion-1/4sticks

  • Mini tomatoes-6pieces

  • Grated ginger-1/2 tsps

  • Potato starch)-to tast

  • Coarsely ground black pepper-to tast

作り方 Preparation

Step ①


 マトは、へたを取り縦1/4等分に切る。長ねぎ はみじん切りにする。

鶏肉を取り出し、キッチンペーパーで余分な水 分をふきとり、片栗粉をまぶす。温めたフライ

 パンにごま油をひき、鶏肉を入れて中火前後で 両面に焼き色がつき、火が通るまで加熱する。 火が通ったら取り出し、まな板に移す。

1) Shave the thickest part of the chicken breast into even slices. Shell boiled eggs and cut lengthwise into 1/4-inch pieces. Mini Tomatoes.Remove the stems from the tomatoes and cut lengthwise into 1/4-inch pieces. Finely chop green onions.Finely chop leeks.

2) Mix soy sauce and 【A】 in a bowl.Cover with kitchen paper and refrigerate for 30 minutes to 1 hour.

3) Take out the chicken, wipe off excess water with kitchen paper, and sprinkle with potato starch.Add the chicken and cook over medium heat until browned on both sides.Grill over medium heat until browned on both sides and cooked through.When cooked through, remove the chicken and transfer to a cutting board.

4) Add【 B】 and 4 tablespoons of the dipping sauce from (2) to the frying pan.Add 【B 】and 4 tablespoons of the dipping sauce from (2) to the pan (3) and cook over the same heat until thickened.

(5) Pour (4) over the chicken cut into bite-sized pieces, garnish with baby leaves and boiled egg, and serve in a well-balanced dish.
